Dinner is on the Table

The world we live in today doesn’t always allow very much time for things that were once easily attainable, like regularly sitting down to dinner with your family.  I am thankful that gathering around our table for dinner is the norm for my family.

Some days that dinner may be pizza or some other zero effort meal due to lack of either preparation time or a trip to the grocery store.  Whatever it is, we sit at our table, say a prayer, and enjoy it together.

I prefer to make dinner and any time I have things to do that don’t involve the stove or knives, I like to let the kids help me.  They love to pour ingredients, crack eggs, and identify what comes next.  I think it will help them with measurements as they get older and who knows, maybe they too will enjoy cooking.  Letting them help also takes some of the stress out of making dinner.  I know it seems like it would do the opposite, but when they are involved in what I am doing, I not only get to spend time with them, but I know they aren’t off drawing on the walls or fighting with each other.

Most nights I enjoy making dinner and one of my favorites is sweet & sour chicken.  It tastes fantastic and is very easy to make.  Continue reading below for the recipe.

Sweet & Sour Chicken

  • 1 lb.Chicken Tenders
  • 1Green Pepper                                                                              Sweet and Sour Chicken
  • 1 Red Pepper
  • 1/2 White Sweet Onion
  • Pineapple Chunks (optional- canned or fresh)
  • Corn Starch (enough to coat chicken)
  • Canola Oil


  • 3/4 cup Sugar
  • 1/2 cup Apple Cider Vinegar
  • 1/4 Ketchup
  • 2 Tbsp. Soy Sauce
  • 2 Tbsp. Water
  • 1 Tbsp. Corn Starch
  1. Cut chicken into bite sized pieces and coat with corn starch. Heat canola oil in a large pan (I use a wok) to its smoking point, then add corn starch coated chicken.
  2. While chicken is cooking add all the sauce ingredients except the water and corn starch in a small sauce pot.  (Dissolve the corn starch in the water and set aside.)  Bring sauce to a boil.
  3. After chicken is slightly browned and cooked through, remove from pan and drain excess oil.  Add chopped peppers and onions to the pan and cook.  If you are adding pineapples, do so now.  Then add the chicken back in and stir.
  4. Your sauce should be boiling at this point and you will add the water/cornstarch mixture to thicken your sauce. Once it thickens add it to your chicken mixture, coat well and serve.

You can serve it by itself, with rice, or noodles.  Either way, it’s yummy and even my little ones love it.
